Serves 10 people

Ingredients for the Clementine Cordial (yields 750ml)

300ml fresh clementine juice
200ml fresh lemon juice
500g fine sugar

To make the Premix (produces 850ml, serving 10)

400ml good quality vodka
100ml dry gin
150ml peach schnapps
200ml clementine syrup (from the recipe above)
A few cranberries, as a garnish
Mandarin essential oil, as a final touch

Directions

Making the Cordial: Put the listed items inside a pot, heat until it reaches a simmer, agitating so the sugar melts. Next, take off the burner and leave to cool down fully. Pour into a clean bottle, cap it keeping it chilled, it will last for around one month.

For the Premix: Pour the specified spirits and syrup into a big jug, leave to sit for 60 minutes, then strain best through a fine cloth, so it's completely strained.

For serving: Add 85ml of the premix into your cocktail shaker filled with ice, and stir gently for about 60 seconds to chill. Filter into a cold coupe glass or similar, top with some cranberries and complete it with a light spray with the mandarin essence over the drink.
